This cake is full of apples and warm spices and topped with a buttery walnut crumble and it is the perfect cosy fall dessert. The recipe uses two chopped apples, which might seem like a lot, but they make the cake especially moist and delicious. The best part is that everything comes together very easily. You can make the crumble in advance, and the cake batter is mixed in just one bowl. If you want to make it even better, there is also an optional maple–tahini glaze that you can drizzle over the top. I suggest using a 9-inch springform pan for this recipe because it makes removing the cake much easier. However, if you do not have one, a regular cake pan will work as well. Simply turn the cake out onto a plate, then flip it onto another plate or serving board.

Apple Harvest Cake Which Is A Seasonal Dessert Ingredients:

Crumble:

  • ½ cup (60 g) all-purpose flour,
  • ⁠¼ cup (28 g) rolled oats,
  • ¼ cup (50 g) dark brown sugar,
  • ½ tsp ground cinnamon,
  • ⁠¼ cup (28 g) chopped walnuts,
  • 2 tbsp unsalted butter, at room temperature,
  • ¼ tsp salt.

Cake:

  • 2 eggs,
  • ¾ cup (150 g) dark brown sugar,
  • ⁠2 Honeycrisp or Granny Smith apples, peeled, cored and cut into ½-inch pieces,
  • ⁠½ cup olive oil,
  • ⁠½ tsp salt,
  • ⁠1 cup plain Greek yogurt,
  • ⁠ ⁠½ tsp baking soda,
  • 2 tsp vanilla extract,
  • ⁠1½ tsp baking powder,
  • 1 tsp ground cinnamon,
  • •⁠ ⁠½ tsp ground cardamom,
  • ⁠1½ cup (180 g) all-purpose flour,
  • ¼ tsp ground ginger,
  • ⁠½ cup (55 g) almond meal.

 

Maple-tahini glaze (optional):

  • 2 tbsp water,
  • 1 tsp vanilla extract,
  • ⁠⁠¼ tsp salt,
  • 3 tbsp tahini,
  • 2 tbsp maple syrup.

How To Prepare Apple Harvest Cake Which Is A Seasonal Dessert ?

Place the rack in the middle position and preheat the oven to 350°F. Line a 9-inch springform pan with parchment paper, then grease it with oil, cooking spray, or butter. To make the crumble, mix all of the ingredients together in a small bowl. Use your fingers to work the butter into the dry mixture until small clusters form. Set it aside. For the cake batter, add the brown sugar and eggs to a large bowl.

Use a hand mixer on high speed to beat the mixture for about 45 seconds, until it turns pale caramel in colour and becomes light and foamy. Add the olive oil, Greek yogurt, and vanilla, and mix again until well combined. Then add the remaining dry ingredients and gently fold them in with a rubber spatula just until everything is mixed, being careful not to overmix.

After that, stir in the chopped apples. Pour the batter into the greased pan and level the surface using a spatula.Scatter the crumble evenly over the top, then place the pan in the oven and bake for 35 to 45 minutes, or you can set the time until a toothpick inserted in the center comes out clean. While the cake bakes, make the optional glaze by stirring all the ingredients together in a small bowl. If the tahini is too thick to pour, add a teaspoon of water to loosen the texture. Let the cake sit in the pan for 15 minutes, then carefully release it from the springform pan. Allow it to cool completely.

If you are using the glaze, drizzle the maple–tahini mixture over the top of the cake right before serving.
