Chickpea and Red Lentil Curry Ingredients
- 1 1/2 cup basmati rice,

- 1 tablespoon lime zest , divided,
- sour cream,
- 1 tablespoon olive oil,
- 1 tablespoon grated fresh ginger,
- 1 onion , finely chopped,
- 1 tablespoon madras curry powder,
- 2 cloves of garlic , minced,
- 1 cup coconut milk,
- 2 tablespoons lime juice,
- 1 cup dried red lentils,
- 1 teaspoon paprika,
- 1 teaspoon ground cumin,
- 1 540 ml can chickpeas , rinsed and drained,
- 1 teaspoon ground coriander,
- 1 398 ml can diced tomatoes.
In a saucepan, combine the rice, 3 cups of water, and a pinch of salt, and bring to a boil. Lower the heat, cover, and simmer until the rice is tender, about 15–20 minutes. Remove from the heat, keep covered, and let it sit for 5 minutes. Stir in 2 teaspoons of lime zest and fluff the rice with a fork. Keep warm until ready to serve.
Meanwhile, heat oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until it becomes tender, about 4 minutes. Stir in the garlic, ginger, and spices, and cook for 1 more minute.
Add the chickpeas, tomatoes, red lentils, coconut milk, and 1 cup of water to the saucepan. Season with salt and pepper and bring to a boil. Reduce the heat and simmer uncovered until the lentils are tender, about 15 minutes, adding more water if necessary. Stir in the lime juice before serving.
Serve the curry over the prepared rice. Add a spoonful of sour cream on top and sprinkle with the remaining lime zest for garnish.
