Tofu chopped salad with sesame dressing: a fresh and crunchy meal that is simple to personalize. This chopped salad is fresh, crunchy, and ideal for this season. The best thing about it is that you can make it with any fresh vegetables you already have.
It tastes so delicious that I could use it on almost anything. Although I kept this version vegan, adding Japanese mayonnaise will make the dressing creamier and give it a more authentic flavour.
Tofu Garnishes Chopped Salad Ingredients
- 1 tbsp maple syrup,
- 2 tbsp soy sauce,
- 1 tbsp neutral oil, such as vegetable or canola,
- 1 tsp toasted sesame oil,
- 1 garlic clove, minced,
- 1 (350 g) block extra-firm tofu, cut into ½-inch cubes,
- ½-inch piece ginger, grated.

- 1 tbsp toasted sesame seeds, crushed with a mortar and pestle,
- 1 tbsp maple syrup,
- 3 tbsp tahini,
- 2 tbsp rice vinegar,
- 4 tbsp water,
- 2 tbsp vegan or Japanese mayonnaise, such as Kewpie,
- 1 tsp toasted sesame oil,
- 2 tbsp soy sauce.
Salad:
- 1 bunch scallions, thinly sliced,
- ½ cup toasted peanuts,
- 2 heads romaine lettuce, roughly chopped,
- 2 cups ready mix salad greens,
- 1 carrot, shredded using the large holes of a box grater,
- 1 red pepper, thinly sliced,
- ½ cup frozen edamame, thawed,
- 1 crisp apple, cored and thinly sliced
How To Prepare?
In a bowl, mix the soy sauce, maple syrup, sesame oil, garlic, and ginger together. Add the tofu and toss it until it is completely coated. Cover the bowl and let it sit for at least 15 minutes, or place it in the refrigerator overnight. When you are ready to cook the tofu, warm the oil in a large skillet over medium heat. Add the tofu and cook it for about 8 to 10 minutes, turning it until all sides are golden brown, and slowly pour in any leftover marinade as it cooks.
Remove the pan from the heat and set the tofu aside. Place all the dressing ingredients in a small bowl and whisk them together until smooth, adding a little water if the mixture needs thinning. Spread the lettuce and mixed greens over a large serving platter, then add the red pepper, carrot, apple, edamame, peanuts, scallions, and tofu on top. Pour the dressing over everything, toss the salad to combine, and enjoy!
